Sun Flowers

Sun flowers are one of the many gifts of summer. Everyone knows that you can eat the seeds and make oil out of them that is low in saturated fats, but not many people are aware that you can eat the flower head as well. This has been happening for centuries, ever since sun flowers originated in the Americas in 1000 B.C.

The young flower stalks can be peeled, chopped and eaten with a dip, the texture is very similar to celery. When sun flowers bloom, you can eat the full buds. Boil them in water for just a few moments. They taste very similar to artichokes and should be eaten the same way.

Not only are sun flowers a good source of food; they are also one of the fastest growing plants. They can reach anywhere between 8 to 12 feet in as little as six months and growing from seed to maturity only takes 90 days. Many people adore sunflowers because the head of the plant will follow the movement of the sun. But not many people are aware that this is a phenomenon known as heliotropism.
